ilocano tableya

Tableya is the simplest form of chocolate. The original color as never alters with artificial food coloring. The original taste was there as it was not added with milk or any kind of nuts. Except for a little bit of sugar to sweetened, tableya is the original form of chocolate made directly from cacao fruits traditionally.

Cacao fruits now are not just kind of fruit that children sipped the nectar because of the sweetness then throw away the seeds. People now know the fruit is the best and only source of chocolate. So throwing them elsewhere is not a good thing to do. Make it into tableya.

How to make tableya the traditional method?

According to Marlyn of Lucbuban, Salcedo, Ilocos Sur, tableya is not hard to make. And here is her guide oh how to make tableya.

11.     Choose the good seed of cacao fruit and clean it well. Choose the seeds with the same sizes and put away the smaller sizes.
22.    Fried them evenly and clean the outer layer of the seed.
33.  Pulverize the cooked seeds in the grilling machine or anything that can be used that can pulverize the cacao seeds.
44.      Mold manually or with the use of molder after adding some sugar and then put in the desired wrapper.
The price may varies but in trade fair that one in the photo with 4 to 5 cut ups is P50 or equivalent to $1.

The government help the small enterpriser through the technology like the molder, providing a good label and wrapper to make it appealing to the consumers.
