Suman, Ilocano Rice Delicacy

Suman or sinuman is rice delicacy that has the distinction of being wrapped of young (yellow) coconut leaves instead of the cliche banana leaves.



Cooking suman is very simple: you cool the glutinous rice like ordinary rice grain. Cook it with water. Then wrapped it individually with the young coconut leaves. Cook this again but this time use coconut extract or juice adding a little bit of salt.

When you eat suman, dip that into sugar or maskovado to make the taste sweeter.

In Ilocandia, suman is commonly prepared in special festivities like fiesta, festivals, anniversary and other special occasions.
